The reproduction cycle of this fish is very quick so it develops more eggs in comparison to the other ones. This fish matures by its 7th year and is the smallest of the sturgeon family in the Caspian Sea. The price of this Caviar is comparatively cheaper.
Sevruga eggs are generally the smallest size eggs and offer a distinctly crunchy texture and the most intense flavor.

Beluga caviar is considered the most luxurious and sought-after variety. Derived from the Beluga sturgeon, which is the largest sturgeon species, its eggs are known for their large size, smooth texture, and delicate, buttery flavor. Beluga caviar is characterized by its pearl-like eggs that range in color from light gray to dark gray, often with a glossy, translucent appearance. Due to its rarity, exquisite taste, and the endangered status of Beluga sturgeon, this caviar commands the highest price among all types.

Osetra caviar comes from the Russian sturgeon and is highly regarded for its unique and complex flavor profile. The eggs are medium-sized, with a firm texture and a nutty, slightly briny taste. Osetra caviar varies in color from golden yellow to dark brown, with the golden variety, known as “Imperial” or “Golden Osetra,” being rarer and more expensive. While not as costly as Beluga caviar, Osetra is still considered a premium variety due to its exceptional taste and quality.

Sevruga caviar is harvested from the Sevruga sturgeon, which is smaller and more abundant compared to Beluga and Osetra sturgeons. Sevruga eggs are smaller in size and feature a more intense, robust flavor with a hint of saltiness. The eggs are typically dark gray or black with a shiny appearance. Due to its stronger taste and more plentiful supply, Sevruga caviar is generally more affordable than Beluga and Osetra varieties, making it a popular choice for those seeking a high-quality caviar at a more accessible price point.
